Compatible solutes

The aim of this collaboration is to increase the storage stability (viability and activity) of starter cultures using compatible solutes isolated from various extremophiles.

To achieve this goal, competencies acquired at the HES-SO Valais Wallis in the field of starter culture production will be combined with the use of compatible solutes isolated by Swissaustral Biotech SA, the industrial partner, from selected strains of  extremophiles. Compatible solutes, also named osmoprotectants, are small molecules that act as osmolytes and help organisms survive extreme osmotic stress. Known examples include betaines, amino acids, and the sugar trehalose.
